- 8 oz tray of large button mushrooms, or 16 large button mushrooms, (preferably a cheese & onion flavour if available)
- 1 peeled garlic clove
- 2 tablespoons butter or margarine
- Potato chips, 2 loosely packed cups (crush them finely)
- 2 oz cream cheese
- Sea salt, 1/3 teaspoon (adjust to taste)
- Freshly ground pepper, 1/4 teaspoon (adjust to taste)
Instructions
- If you prefer, give the mushrooms a quick wash and rinse.
- Carefully remove stems from all mushrooms by twisting and turning gently. Keep the smallest caps together with the stems.
- Using a food processor, blend stems and garlic until the pieces are finely chopped. Don't worry about making them ultra-fine.
- In a sauté pan, combine the mushroom mixture and butter. Cook on medium-low heat, stirring occasionally. Make sure not to rinse the food processor bowl.
- While the mushrooms are simmering, place caps in a microwave steamer tray. Let it sit on a plate and cook in the microwave for 5 minutes at 80% power. Keep them in the microwave (don’t drain the water).
- As the mushrooms cook, add potato chips to the food processor bowl, reusing it from step 3, and turn them into almost powder. Crush the chips further in a tea towel until they are very fine.
- Stir the potato chip powder into the sauté pan with the mushrooms mixture.
- Once the mushroom mixture has fully heated, remove it from the heat and fold in cream cheese.
- Add salt and pepper to the filling according to taste. The mixture should have a rich mushroom flavor with hints of garlic.
- Use a small spoon or your hands to dollop the filling into each mushroom cap, filling it and building a mound that rises about 1/2 inch [1.25 cm] above the cap. You'll likely have leftover filling.
- Microwave the stuffed mushrooms for 1 minute on high power.
