Ingredients (24)

Crust ingredients:

  • 1 ½ cups all-purpose flour
  • ¼ tsp salt
  • 1 tsp sugar
  • 8 tbsp cold unsalted butter (1 stick), cubed
  • 2 tbsp chilled bourbon
  • 3 tbsp ice water

Filling ingredients:

  • 1 lb cooked and peeled sweet potatoes (about 1 ½ pounds raw)
  • 1 tbsp bourbon
  • 1 large egg
  • ½ cup light brown sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter (1/4 stick), softened
  • ¼ tsp salt
  • Pinch each cinnamon, cloves, nutmeg

Topping ingredients:

  • 1 large egg
  • 1/4 cup molasses
  • ¾ cup light brown sugar
  • 2 tbsp unsalted butter (1/4 stick), softened
  • 2 tsp vanilla extract
  • 1 tsp bourbon
  • ⅛ tsp cayenne pepper
  • Pinch salt
  • 10 oz pecan halves

Instructions

Create the crust:

  1. Combine the flour, salt, and sugar in a food processor. Pulse a few times to blend evenly. Add the cubed butter and pulse until butter resembles pea-sized pieces. Mix in the chilled bourbon and ice water until dough holds together when squeezed between fingers.
  2. Scoop the mixture onto a clean surface and work it into a disk using a technique called fraisage. This involves blending the dough by hand to achieve long, alternating strands of butter and dough. This ensures a flaky crust.
  3. Chill the dough for at least 30 minutes and up to a few hours. Preheat the oven to 350°F for at least 30 minutes before baking. Then roll out the dough into a 12-inch circle, ¼-inch thick, line a 9-inch pie plate with it, and refrigerate until ready to bake.
  4. Prick the dough's bottom with a fork and scatter with pie weights. Bake for 15 minutes or until set and lightly golden. Remove the weights and let cool slightly before adding the filling.

Prepare the filling:

  1. Puree the cooked sweet potato pulp in a food processor until smooth. Add the remaining filling ingredients and blend until mixture is smooth. Set aside

Create the topping:

  1. In a bowl, whisk the egg and molasses. Add the brown sugar, softened butter, vanilla, bourbon, cayenne pepper, and a pinch of salt. Set aside

Assemble and bake:

  1. Arrange half the pecans in a single layer in the baked crust, then spread the sweet potato filling on top.
  2. Spread the molasses topping evenly, then arrange the remaining pecans in a decorative layer over the filling.
  3. Bake the pie on a baking sheet for 60-75 minutes or until toothpick inserted in the center comes out clean. Let cool at room temperature for 30 minutes before serving. Serve with whipped cream or cinnamon ice cream!
