Ingredients (12)

  • 1.25 lbs medium cremini mushrooms
  • 1/4 cup canola oil
  • 1 tsp cumin seeds
  • 1 cup finely chopped yellow onion
  • 1 tbsp freshly grated ginger
  • 1 Thai green chili, finely chopped
  • 2 cups finely chopped tomatoes
  • 1/2 tsp turmeric powder
  • 1 tsp Deggi Mirch (Indian red chili powder)
  • 1.5 tsp salt, divided
  • 2 bunches green onions, white and green parts, finely chopped
  • 1 tbsp fresh lemon juice

Let's Cook!

  1. Rinse the mushroom caps under running water. Discard the stems and cut the caps into quarters. Place them in a large bowl.
  2. Heat oil in a wok or kadai over medium-high heat until it shimmers. Toss in cumin seeds and let them sizzle. Then, add the onion and cook until it becomes tender and starts browning slightly, about 3 minutes. Add the ginger, green chili, tomatoes, turmeric, and Deggi Mirch. Cook, stirring occasionally, to soften the tomatoes, approximately 3 minutes.
  3. Throw in the mushrooms and 1 tsp of salt. Cook, stirring occasionally, for 5 minutes. Stir in the green onions, lemon juice, and the remaining 1/2 tsp salt. Serve and enjoy this delectable, spicy, and earthy dish!
