- 1/2 cup finely diced red onion
- 1/2 cup thinly sliced white part of green onion
- 1 teaspoon finely minced ginger
- 2 teaspoons finely minced garlic
- 1 thinly sliced jalapeno (optional, adds heat)
- 2 teaspoons toasted white sesame seeds
- 2 teaspoons sesame seed oil
- 1/4 cup soy sauce
- 1 tablespoon rice wine vinegar
- 2 teaspoons sugar
For Wakame Salad:
- 1 package dried wakame
- 1/2 cup rice wine vinegar
- 1 tablespoon finely minced ginger
- 1 finely chopped green onion
- 1/2 cup vegetable oil
- 1 tablespoon soy sauce
- 2 teaspoons sesame seed oil
- 2 teaspoons sugar
For the Poke Bowl:
- 1 pound ahi tuna, cut into 1/2-inch cubes
- 1 julienned carrot
- 1 cubed avocado
- 1 thinly sliced cucumber
- Nori, julienned for garnish
- Cooked jasmine rice
- Furikake for sprinkling
Instructions
- Combine all ingredients for the poke sauce in a medium mixing bowl. Set aside to let the flavors meld.
- Rehydrate the wakame. Bring water to a boil in a medium saucepan over high heat. Add the wakame to the saucepan, take it off the heat, and let it sit for 20 minutes or until it softens. Drain the wakame, rinse with cold water, and pat dry with paper towels. Thinly slice the wakame.
- In a separate bowl, whisk together the vinegar, ginger, green onion, oil, soy sauce, sesame oil, and sugar to create the wakame salad dressing. Add the rehydrated wakame to the dressing and toss to combine.
- Add the ahi tuna cubes to the poke sauce and gently toss to coat.
- Spoon jasmine rice into a shallow serving bowl. Arrange sections of the poke, wakame salad, and julienned carrots, cubed avocado, and sliced cucumber on top of the rice. Garnish with nori strips and a sprinkle of furikake.
