  • 1/4 teaspoon whole black peppercorns
  • 1 bay leaf
  • 1 bunch red radishes (about 10 to 13 radishes)

Instructions:

  1. Mix the vinegar, sugar, water, salt, mustard seeds, coriander seeds, black peppercorns, and bay leaf in a small saucepan. Bring to a simmer over medium-high heat, stirring occasionally until the sugar has dissolved. Let the brine cool for 5 minutes.
  2. Trim the leafy tops off the radishes and wash them. Thinly slice and place the radishes in a pint jar.
  3. Pour the cooled brine into the jar, making sure the radishes are completely covered. Let the mixture sit at room temperature for about 20 minutes. Seal the jar with a tight-fitting lid and give it a good shake to evenly distribute the brine and spices. Refrigerate and let pickle for at least 1 day before using. These tangy treats will last up to 5 days in your refrigerator.
