Glazed Chicken Wings Coated in Sweet Soy Sauce

Please note that we're using an oven for cooking, but you can easily grill these wings on a hot barbecue instead. Just be sure to oil your grate before cooking, and adjust your heat to about 375°F.
Ingredients (Serves 4-6)
For the chicken:- 1/4 cup brown sugar- 1/4 cup soy sauce- 2 tbsp sake or dry sherry- 4 cloves garlic, minced- 3 lbs chicken wings, separated into 2 pieces, wing tips removed and discarded
For the sauce:- 1/4 cup brown sugar- 1/4 cup soy sauce- 2 tbsp finely chopped fresh pineapple- 2 tbsp sake or dry sherry- 1 tbsp white wine vinegar- 1 tbsp naturally sweetened pineapple juice- 1 clove garlic, minced- 1 tbsp cornstarch dissolved in 1 tbsp cold water
To serve:- 1 tsp toasted sesame seeds, for garnish
Instructions
For the chicken:
- Combine the brown sugar, soy sauce, sake or sherry, and garlic in a large bowl. Add the chicken, stir to coat, and let marinate for at least 2 hours, up to 12 hours.
- Preheat your oven to broil on high, and position a rack in the middle. Line a baking sheet with foil and set a wire rack over the foil. Remove the chicken from the marinade, letting any excess drip off, and arrange in a single layer on the rack.
- Broil the chicken until the meat starts to pull away from the bone and the skin is golden and crispy, about 12 minutes per side, flipping once halfway through. Meanwhile, prepare the sauce.
For the sauce:
- Combine all sauce ingredients (except the cornstarch-water mixture) in a saucepan and bring to a boil over medium-high heat. Reduce the heat to low and simmer until the sauce has thickened and reduced to about 1 cup, about 10 minutes. Add the cornstarch mixture and cook until the sauce has thickened, about 1 minute.
To serve:
- Toss the cooked wings in the sauce, sprinkle with sesame seeds, and serve immediately.
