  • Prep Time: 40 minutes (including dough chilling)
  • Cook Time: 25 minutes
  • Total Time: 1 hour and 5 minutes
  • Servings: 6 pop tarts
  • Difficulty: Intermediate
  • Course: Dessert

What You'll Need:

For the Dough:- 2 cups all-purpose flour- 1 tbsp granulated sugar- 1 tsp ground cinnamon- 1 tsp salt- 2 sticks (8 ounces) cold unsalted butter, cut into 1/2-inch cubes- 2 large egg yolks- 1/4 cup milk (not nonfat)

For the Brown Sugar-Cinnamon Filling:- 5 tbsp packed dark brown sugar- 5 tsp granulated sugar- 1 tbsp all-purpose flour- 3/4 tsp ground cinnamon

For the Tart Assembly:- Flour, for rolling the dough- 1 large egg- 1 tsp water

For the Icing:- 3/4 cup powdered sugar, sifted- 4 tsp milk, plus more as needed- 1/2 tsp ground cinnamon- 1/4 tsp vanilla extract

Let's Make some Pop Tarts!

Prepare the Dough:1. In a large mixing bowl, whisk together the flour, sugar, cinnamon, and salt. Add the butter and toss until well coated. Using a pastry blender or your fingers, cut the butter into the dry ingredients until you get pea-sized pieces.2. Whisk the egg yolks and milk in a small bowl. Add this to the flour mixture and mix with your hands until large clumps form. Turn the mixture out onto a floured surface and knead briefly, working the butter into the dough.3. Divide the dough into 2 equal portions and shape into 2 (6-by-5-inch) rectangles. Wrap each tightly in plastic wrap and refrigerate for at least 1 hour.

Prepare the Brown Sugar-Cinnamon Filling:1. In a small bowl, combine all the filling ingredients. Set aside.

Assemble the Tarts:1. Preheat your oven to 375°F. Line a baking sheet with parchment paper.2. Lightly dust a work surface with flour and roll 1 dough rectangle into a rough 12-by-10-inch rectangle, rotating and re-flouring as needed. Cut the dough into 6 equal rectangles (about 3 1/2 inches wide by 4 1/2 inches tall). Using a flat spatula, transfer the rectangles to the prepared baking sheet, and place the baking sheet in the refrigerator.3. Crack the egg into a small bowl and whisk with the water. Set aside.4. Roll out the second dough rectangle to the same size as the first, trim and cut into 6 equal rectangles. Prick the dough with a fork, then remove the chilled dough rectangles from the refrigerator, brush a thin coating of the egg wash over each, and top with the brown sugar-cinnamon filling.5. Place the pricked rectangles on top of the filling-covered rectangles, press to adhere, and gently push the filling to slightly flatten. Using a floured fork, crimp the edges of the tarts and bake for 23-25 minutes or until golden brown. Transfer to a wire rack and let cool completely.

Prepare the Icing:1. In a small bowl, whisk together the icing ingredients. Drizzle over the cooled pop tarts and let set before serving.

Remember: If you want to roll out the dough scraps for additional tarts, you'll need more filling and glaze. You can make the dough up to a day ahead; just let it soften a bit before rolling out. Enjoy your binge-worthy brown sugar-cinnamon toaster treats!

  • These Brown Sugar-Cinnamon Toaster Treats also pair well with a variety of nutritious recipes, such as a fruit salad or a bowl of yogurt, for a balanced dessert option.
  • To add a splash of color to the tarts, consider glazing them with a simple icing made from powdered sugar and milk before serving, especially if you're planning to serve them at a special occasion.
  • If you're feeling adventurous, you can experiment with different filling recipes for these tarts. For example, you could try nut-based fillings like almond or pecan for a unique twist on the classic pastry.
